The world's most renowned black grape variety, Cabernet Sauvignon is the major grape in Bordeaux production. Today it is planted in nearly every wine producing country, and is often used to produce single varietal wines. Being late ripening, it should be grown in relatively warm climates and its high phenolic content produces deeply coloured wines which are capable of long ageing. Outside of France, our favourite examples of Cabernet Sauvignon are from Australia's Victoria plus Chile makes some great value wines from the Central Valley.
